Forward Carroll, 31, came back from West Ham last summer to his hometown club and has agreed to an expansion of one year.
Spaniard Manquillo, 26, joined Atletico Madrid’s Magpies in 2017 and marked another four-year contract.
Midfielder Matty Longstaff and loan players Nabil Bentaleb and Danny Rose have agreed on a transient expansion until the finish of the season.
After this summer, a contract was offered to Longstaff, 20, having been connected to Serie A side Udinese.
Notwithstanding, Valentino Lazaro and Inter Milan have on a basic level agreed to broaden the loan of the Austrian midfielder until the finish of the flow season.
Loot Elliot, Jack Colback, and Jamie Sterry will all depart Newcastle at the finish of June when their contracts lapse.
